Wal is another type of lentil! I know, there are so many, it's hard to keep them straight! But they are all delicious. Often, using the same ingredients for different lentils can create a totally different flavor. This recipe can be made using split moong dal also.
Ingredients:1 cup split wal dal
1 onion, diced
Whole spices (1/4 tsp mustard seeds, 1/2 tsp cumin seeds)
Pinch of asofoteida (a.k.a. hing)
1/2 tsp chili pwd
1/4 tsp turmeric pwd
1 tsp cumin pwd
1/2 tsp garlic paste (homemade or store bought)
1/2 tsp green chili paste (homemade or store bought)
2 tsp salt
2 tsp sugar
1 tbsp oil
Preparation:
Soak wal dal in water for at least 3-4 hours.
Cook:
Heat oil on medium heat.
Add whole spices and hing.
Once popped, add garlic, green chili pastes and onions and saute until onions are transparent.
Add turmeric, chili pwds and mix well w/ onions.
Drain wal dal and add to pot. Saute for 5 mins.
Add 2 cups of water and cover.
Check every 5-7 mins, add water if evaporates and sticking to pot.
Once wal dal is done, add cumin pwd, salt and sugar. Adjust according to taste.
