This recipe is brought to you through one of my closest friends, Sharon. She is a great cook, and she has made this for me several times whenever I go to visit her. I lowe it!
Ingredients:1 lb pork tenderloin, diced
1 tsp chili pwd
2 tsp curry pwd (can be any generic curry pwd found at most grocery stores)
1 tsp meat masala
2 tsp mustard seeds
2-3 curry leaves (sub w/ bay leaves)
1 onion, diced
1 tomato, diced
Juice from 1/2 lemon
1 tsp salt
1 tbsp oil
Preparation:
Marinate pork w/ chili, curry and meat masala pwds and salt overnight.
Cook:
Heat oil on medium heat.
Add mustard seeds and curry leaves.
Once popped, add onions and saute until golden brown.
Add tomatoes and saute till paste-like. Add water if sticking to pot.
Add pork and mix well so spices cover meat.
Once cooked, add lemon juice and salt.
Garnish w/ fresh chopped cilantro.
