I love to eat. And anyone who knows me knows that I also love to feed. Unfortunately I'm not always in close proximity to the people who love to eat my food. So this website is for those who miss my cooking, or for those who are feeling adventurous and are looking for some new flavor in their kitchen.
A lot of these recipes are family recipes and you will be hard pressed to find them in your friendly neighborhood Indian restaurant. They are also pretty regionally specific, so if you happen to find yourself in a "Marathi" restaurant in Mumbai (the most culturally diverse city in India), you may see some familiar fare on the menu.
From time to time I will stray from Indian food; Thai, Italian, Middle Eastern. But I always find my way back!

Classic Lasagna


Clearly this is not Indian, but it's a great recipe for lasagna I found. It takes a while, but it's lasagna, of course it takes a while! But it's so worth it! Vegetarian and meat options in recipe below.

Marinara Sauce
Ingredients:
1/2 cup E.V.O.O.
1 onion, diced
4 cloves of garlic, minced, divided
2 cans crushed tomatoes
1 small can tomato paste
2 bay leaves
1/2 cup fresh basil leaves, chopped
Pinch of dried oregano
1 tsp crushed red pepper
2 tbsp butter
1 tsp salt
1/4 tsp crushed black pepper

Cook:
Heat oil on medium high heat.
Add onions and half of the garlic and saute until soft and transparent.
Add crushed tomatoes, tomato paste, bay leaves salt and pepper and simmer uncovered on low heat for 1 hour.
Once sauce starts to thicken, add rest of garlic, basil, oregano and crushed red pepper.
Once done, add butter to reduce acidity.

Meat/Vegetables
Ingredients:
1 lb ground meat (this can be any kind of ground meat; chicken, beef, pork, etc)
OR 2 zucchini sliced, 8 oz sliced mushrooms, 1 sliced onion
1 clove of garlic
1/4 cup fresh basil, chopped
1/4 tsp dried oregano
1/4 cup E.V.O.O.
1 tsp salt
1/4 tsp crushed black pepper

Preparation:
Mix meat/veggies w/ onions, basil, oregano, salt, pepper and garlic.

Cook:
Heat oil on medium heat in frying pan.
Saute meat until cooked.
If cooking vegetables, saute everything together until water from veggies evaporates.

Lasagna
Ingredients:
1 lb ricotta cheese seasoned w/ 1 tsp salt and 1/4 tsp crushed black pepper
1 egg beaten into ricotta cheese
1 lb lasagna sheets, cooked al dente in flat pan in oven. Coat sheets w/ butter and separate w/ aluminum foil
2 10 oz packages frozen chopped spinach, thawed, cooked and squeezed dry
3 cups shredded mozzarella
1/4 freshly grated parmesan cheese
2 tbsp butter

Cook:
Preheat oven to 375F.
Into bottom of 13"x9" glass baking dish, spread 1/3 of marinara sauce.
Layer pasta sheets side by side, covering bottom of baking dish.
Evenly spread a layer of all the ricotta cheese mixture.
Evenly spread a layer of all the spinach.
Arrange another layer of pasta sheets.
Spread all meat/veggies on top of pasta.
Sprinkle half of mozzarella over meat/veggies.
Spread another 1/3 of the sauce over cheese.
Arrange final layer of pasta sheets.
Top w/ remaining sauce.
Sprinkle all parmesan cheese over the sauce.
Sprinkle remaining mozzarella.
Cut butter into 1/4" cubes and arrange on edges of baking dish and in middle.
Place baking dish on cookie sheet. Cover w/ aluminum foil.
Place lasagna dish on middle rack of oven and back for 30 mins.
Remove aluminum cover and continue to bake for another 15 mins.
