Ingredients:
1 butternut squash, peeled and cubed
1 tsp cumin seeds
1 dried chili (or green chili, sliced)
1/4 tsp turmeric pwd
1/2 tsp chili pwd
1 tbsp oil
For yogurt sauce:
2 tbsp yogurt
1/4 tsp gram flour
1 tbsp crushed peanuts
1/4 tsp turmeric pwd
1/2 tsp chili pwd
1/4 tsp tamarind paste
1 tsp salt
1 tsp sugar
Mix all ingredients so they are well combined.
Cook:
Heat oil on medium heat.
Add cumin seeds and dried chilies.
Once popped, add squash, turmeric and chili pwds.
Saute for a few mins.
Add yogurt sauce and simmer squash for 10-15 mins, or until squash is soft.
Garnish w/ fresh chopped cilantro.
