This is one of the dishes that my friends and I lived off when we got tired of Italian food when living in Rome. I know, who ever gets sick of Italian food? After 5 months, you could get sick of anything. Anyways, this was Melissa's specialty! It's not very traditionally Thai, but it's delicious.
Ingredients:1 lb chicken breasts, cut into inch cubes
1 onion, diced
2 cups of chopped vegetables (brocoli, zuchini, baby carrots, green peas, green beans, red peppers)
2 cloves garlic, minced
1/2 tsp turmeric pwd
1/2 tsp chili pwd
1 tsp curry pwd (this can be any generic curry pwd found at any grocery store)
1 tsp coriander pwd
1 1/2 cup chicken broth
2 tbsp coconut milk pwd (can sub w/ 1/2 cup coconut milk)
2 tbsp peanut butter
1 tbsp fish sauce
1/2 cup dried apricots, diced
4 tbsp honey
1 tbsp oil
Fresh cilantro and scallions for garnish
Cook:
Heat oil on medium heat.
Sear chicken until golden brown.
Remove from oil and pat oil dry w/ paper towel.
To same pan, add onions and saute till golden brown.
Add garlic and saute for few mins.
Add turmeric, chili, coriander, curry pwds and incorporate into onions and garlic.
Add cooked chicken, vegetables, chicken broth, coconut milk, peanut butter, fish sauce, honey and dried apricots.
Stir and bring to boil, cover and simmer until desired consistency achieved.
Garnish w/ cilantro and chopped scallions.
