This is a great breakfast with some paratha or toast. If you don't eat eggs, this can be easily substituted with extra firm tofu cut into little cubes.
Ingredients:
3 eggs
1 onion, diced
Whole spices (2 cinnamon sticks)
1/4 tsp turmeric pwd
1/2 tsp chili pwd
1/2 tsp cinnamon pwd
1/4 tsp clove pwd
Few stalks of cilantro, chopped
2 tsp salt
2 tsp oil
Preparation:
Beat eggs well with cinnamon pwd.
Cook:
Heat oil on medium heat.
Add whole spices.
Once fragrant, add onions and saute till golden brown.
Add clove, turmeric, chilli pwds, salt and chopped cilantro. Saute for a few mins.
Add beaten eggs and stir well until eggs are scrambled.
