I love to eat. And anyone who knows me knows that I also love to feed. Unfortunately I'm not always in close proximity to the people who love to eat my food. So this website is for those who miss my cooking, or for those who are feeling adventurous and are looking for some new flavor in their kitchen.
A lot of these recipes are family recipes and you will be hard pressed to find them in your friendly neighborhood Indian restaurant. They are also pretty regionally specific, so if you happen to find yourself in a "Marathi" restaurant in Mumbai (the most culturally diverse city in India), you may see some familiar fare on the menu.
From time to time I will stray from Indian food; Thai, Italian, Middle Eastern. But I always find my way back!

Apple Crumble

Obviously this is not Indian, let alone a Marathi dessert. But my mom, the most Marathi-bias person I know when it comes to sweets and desserts, loves it! So, I'm officially naming it a Marathi dessert! In Marathi this roughly translates to "Kurkure Safarchand".

Ingredients
For the crumble:
1/2 cup whole wheat or all-purpose flour
1 cup rolled oats
1 cup of some other kind of cereal (you can use bran flakes, cornflakes, anything flaky and crunchy), crushed
1/2 cup walnuts and/or pecans, crushed
The above dry ingredients can be adjusted according to taste; if you like more oats, you can use more oats, or you can omit the nuts all together and substitute with flour or cereal, as long as there are a total of 3 cups of dry ingredients.
1/2 cup brown sugar
1tsp baking pwd
1 tsp cinnamon pwd
1 stick unsalted butter

For the filling:
6 apples (about 3 lbs), sliced into thin wedges (you can replace a couple of apples with pears if you want... it's quite yummy)
2 tbsp whole wheat or all-purpose flour
1 tsp cinnamon pwd
1/4 cup brown sugar
1 lemon, juiced
A teeny tiny pinch of salt

Prepare:
Preheat the oven to 375F.
Over very low heat, melt the stick of butter.
Combine all the dry ingredients for the crumble (flour, oats, nuts, cereal, sugar, baking pwd, cinnamon pwd) in a glass bowl.
Add melted butter and combine with dry ingredients to produce large and small crumbly bits. You don't have to break down all the large lumps, this way it creates a nice varied texture.
Place this bowl in the fridge until needed.
Combine all the ingredients for the filling. Make sure the flour and sugar evenly coats the apple wedges.
Transfer this to a lightly greased 9x13 glass baking dish.
Remove the crumble from the fridge and pour over the filling in an even layer.

Cook:
Cook for 45-60 mins, until the topping is golden brown and the fruit is bubbling below.
Serve warm or at room temp with vanilla ice cream!
