I love to eat. And anyone who knows me knows that I also love to feed. Unfortunately I'm not always in close proximity to the people who love to eat my food. So this website is for those who miss my cooking, or for those who are feeling adventurous and are looking for some new flavor in their kitchen.
A lot of these recipes are family recipes and you will be hard pressed to find them in your friendly neighborhood Indian restaurant. They are also pretty regionally specific, so if you happen to find yourself in a "Marathi" restaurant in Mumbai (the most culturally diverse city in India), you may see some familiar fare on the menu.
From time to time I will stray from Indian food; Thai, Italian, Middle Eastern. But I always find my way back!

Red Fish Curry


This dish can be made out of any meat, or even with just the veggies. I've tried if with pork tenderloin, chicken breasts, shrimp and they all taste great.

Ingredients:
4 6 oz halibut fillets, skin removed
1 cup carrots, julienned
1 red bell pepper, julienned
1/2 cup frozen green peas
1/2 cup frozen edamame
(can substitute any of the above vegetable with any of your favourites; mushrooms, bamboo shoots, brocoli, green beans, etc)
1 onion, half diced and half sliced
2 cloves of garlic, minced
Inch wide piece of ginger, minced
2 tsp red curry paste (store bought)
1 cup low-sodium chicken broth
2 tbsp lime juice
2 tbsp coconut milk pwd (1/2 cup coconut milk)
1 tsp salt
1/4 tsp black pepper
1 tbsp oil

Preparation:
Season fish with salt before cooking.

Cook:
Heat oil on medium heat.
Add ginger, garlic and diced onions and saute until golden brown.
Add curry paste and saute for a few mins.
Add chicken broth, coconut milk, salt and pepper and simmer for 5 mins.
Add veggies and let them cook for a few mins.
Place fish in pan and coat w/ sauce.
Cover and cook until fish flakes easily (should take about 7 mins).
Once cooked, stir in lime juice and salt as needed.
Garnish w/ fresh chopped cilantro.
